This careful balancing act allows Martin to create a whiskey that is as consistent as it is complex. “I’ll do whatever I need to do to create the consistent profile,” he says, explaining that he adjusts ageing times based on the season and other environmental factors. “The main overarching goal—besides making the best whiskey we can—is to make the most consistent whiskey.”
